Burt Katz opened the original Pequod's in Morton Grove, and in January 1992 a second location opened in Lincoln Park. Its reputation rests on one thing: the caramelized cheese crust. A ring of mozzarella goes around the rim of the pan and caramelizes as the pie bakes, leaving a dark edge that is crisp and chewy at once. The house style is pan pizza, a close cousin of Chicago deep dish.
Pan pizza with sausage or pepperoni is the classic order, but the menu runs wider than the signature. There is a thin crust with the same long list of toppings, a handful of appetizers like cheese corners and jalapeno poppers, pastas, sandwiches, and a small selection of desserts. The bar pours local drafts such as Spiteful Pequod's IPA and Goose Island 312 alongside wine and spirits.
The kitchen runs Monday through Saturday from 11:00 AM to 2:00 AM and Sunday from 11:00 AM to midnight, which long ago made it a Lincoln Park late-night pizza stop. Saturday is the busiest day, and the dinner rush between 6 and 8 PM packs the room. Guests waiting on a table can grab a drink at Whale Tale, a couple of doors down.
Reservations are the way in: the restaurant suggests booking weekday dinners one to two days ahead, and weekend dinners a week ahead for groups under five, two weeks for five or six, and three weeks for seven or more.
