Swift & Sons is a grand steakhouse in Fulton Market under Executive Chef Chris Pandel, set inside a building that once served as a cold storage facility in the middle of Chicago's meatpacking district. It is recommended in the Michelin Guide, and the cooking is serious without the formality of a tasting-menu room.
The AvroKO-designed space imagines the headquarters of a turn-of-the-century meatpacking company, inspired by industry pioneer Gustavus Swift: high ceilings, stained glass lighting, mosaic marble floors and raw concrete columns left exposed from the original building. A lounge, grand dual-level bars, a main dining room and private and semi-private rooms give it a table for almost any occasion, from a first date to a closing dinner.
The Beef Wellington, made with mushroom, foie gras and spinach and served for two, is the dish to order at least once. Around it sit Prime steaks including a dry-aged bone-in ribeye, oysters by the half dozen, a cold platter of poached shrimp, chilled Maine lobster, oysters and scallop crudo, and handmade pastas that show the kitchen's range past the grill. It is a menu that rewards a full table.
Dinner runs nightly: Sunday 4:30 to 9, Monday through Thursday 4:30 to 10, and Friday and Saturday 4:30 to 11, with a Monday-through-Friday happy hour from 4:30 to 6 that is the smart early-evening move.
