Swift & Sons · Chicago
Boka Group's Michelin-listed Fulton Market steakhouse, home of the Beef Wellington.
Why we recommend Swift & Sons in Chicago
Swift & Sons is Boka Restaurant Group's grand statement in Fulton Market, a Michelin Guide-listed steakhouse that trades the dark-wood cliche for something more ambitious. To be precise, it is recommended in the Michelin Guide, not a starred restaurant, and that is exactly the right level of expectation: serious cooking under Executive Chef Chris Pandel, set in a historic meatpacking-district building.
What makes it matter is the balance. It reads as a classic American steakhouse but cooks with the polish you would expect from one of Chicago's best restaurant groups, which is why it has become a West Loop destination in its own right rather than just another chophouse.
