The Publican is Chef Paul Kahan's Fulton Market restaurant, built around oysters, heritage pork and beer. Executive Chef Rob Levitt now leads the kitchen, and the menu names the Midwest farms behind each plate, from Slagel Family Farm pork and chicken to Spence Farm vegetables.
The room takes its cue from a European beer hall, paired with the energy of Fulton Market, and it is set up for sharing and conversation. Beers are brewed in collaboration with local makers, and the wines and cocktails are chosen to go with the food. For a bigger occasion, the restaurant hosts private parties and full buyouts, seating up to 125 guests.
Start with the Slagel Family Farm pork rinds with cheddar, malt vinegar and cayenne and a round of raw-bar oysters, then build the meal around The Publican Chicken, a roasted half chicken with beef fat frites, or the 60-day dry-aged New York strip for the table. It is hearty, produce-and-protein cooking that rewards ordering across the table.
Service covers weekday brunch and lunch from 11 AM to 2 PM, dinner nightly from 4 PM, and weekend brunch from 9 AM to 2 PM, which makes it flexible: a midday table between meetings, an evening dinner for a group, or a slow Saturday morning built around oysters and eggs. A weekday happy hour runs from 4 to 6 PM.
