Carama at Mandalay Bay is Wolfgang Puck's Italian restaurant, opened over Super Bowl weekend in February 2024 in the space that housed his Lupo concept for more than two decades. The room is a homage to his mother Maria, who taught him to cook Italian in his early teens in Austria.
The handmade pastas anchor the menu: rigatoni Bolognese, lobster tagliatelle with uni-tomato butter, gnocchi sorrentina, ricotta ravioli with English peas and king trumpet mushrooms, and spaghetti chitarra fra diavolo with tiger prawns. While black truffles are in season, the menu adds them to tagliatelle, risotto and a pizza bianca.
The wood-fired pizza oven is the reason groups split the table. The margherita is the benchmark, and the pizza maialina layers pepperoni, guanciale and spicy soppressata. Veal parmigiana with burrata, whole grilled branzino and a 48-day dry-aged ribeye cover the mains. For dessert, the Illusione al Limone is an Amalfi lemon cake with lemon curd, served alongside a tiramisu della nonna.
