Carversteak opened at Resorts World Las Vegas on December 30, 2021, in The District next to the Conrad valet. DesignAgency gave it a mid-century modern look, and the space runs from a 70-foot quartzite bar and lounge into a plush main dining room and out to a terrace with an outdoor bar and lounge gardens overlooking the Strip.
Executive Chef Daniel Ontiveros, whose career runs through Joel Robuchon Restaurant and Scotch 80 Prime, built the menu around dry-aged American steaks and Japanese Wagyu. The current list includes a 14-ounce Kansas City cut dry-aged 28 days, a 5-ounce Miyazaki A5 striploin and the 50-ounce CS Tomahawk of Australian Wagyu. Lobster en Croute wraps a 2-pound Maine lobster in puff pastry, caviar comes by the ounce, and the Baked Nevada is sized for four to six.
Drinks come from master mixologist Francesco Lafranconi, with a long wine list and a whiskey list that reaches Old Rip Van Winkle 10 year, William Larue Weller and Yamazaki 12. There are two private rooms: the Knife Shop, where any blade on display can be bought and shipped home, and the Whiskey Room, lined with rare bottles.
