Gymkhana opened at ARIA on December 3, 2025, the first United States location of the London restaurant that holds two MICHELIN stars. It took over the space that was Julian Serrano Tapas, and it takes its cue from the elite clubs of India, where members gathered to eat, drink and play sport. The Las Vegas room is listed in the MICHELIN Guide.
The menu covers kebabs and tikkas from the charcoal tandoor, regional curries, biryanis and chaat-style sharing plates. Tandoori Masala Lamb Chops, Goat Methi Keema, Pork Cheek Vindaloo and Venison Biryani are on the current menu, and Beef Short Rib Pepper Fry and Wagyu Keema Naan are made only for Las Vegas. A tasting menu, a vegetarian tasting menu and a wine pairing are also offered.
The bar pours Indian-inspired cocktails, including punches presented tableside that serve eight, and Las Vegas-only drinks such as the Delhi Dalgona and the Pina Col-Lassi. The restaurant seats 162 across the main dining room, a bar lounge and a semi-private area. Dinner starts at 5pm nightly and runs until 10pm Sunday through Thursday and 10:30pm on Friday and Saturday. Reservations open 45 days out, the dress code is business casual, and no one under 21 is admitted after 10pm.
