STRIPSTEAK is Michael Mina's steakhouse at Mandalay Bay, a short walk from the casino floor and the convention center at the south end of the Strip. The dining room was redesigned to evoke the surrounding Mojave Desert, and an expansive private dining room handles larger events.
The steaks are aged beef, wood-fired and butter-poached, and every cut is finished with red wine-shallot butter. The list runs from an 8-ounce center-cut filet mignon and a 16-ounce New York strip to a 20-ounce cowboy ribeye, with an American Wagyu rib cap and a 14-ounce American Wagyu New York from Mishima Reserve. For two, there is a 40-ounce Creekstone tomahawk and a 36-ounce porterhouse. The trio of duck fat fries comes with ketchup, truffle aioli and buffalo ranch.
Before the steak, the raw bar covers shrimp cocktail, oysters, hamachi crudo and wagyu steak tartare, seafood towers come chilled or miso-broiled, and the caviar list includes Petrossian Royal Kaluga and a caviar jelly donut. Warm beignets for two close the meal. Dinner runs 4:30 to 9:30 p.m. Sunday through Thursday and until 10 p.m. on Friday and Saturday, and dress is resort casual.
