Republique occupies a 1928 building that Charlie Chaplin built and architect Roy Seldon Price designed. When Walter and Margarita Manzke took the keys in 2013, they stripped the space back to its original bones: exposed brick, arched ceilings, tiled floors, and wrought ironwork. The result is not a theme but a room that has always looked exactly like this. It holds a Michelin Plate and ranked fourth on the Los Angeles Times 101 Best Restaurants list in 2024.
