Republique occupies a 1928 building that Charlie Chaplin built and architect Roy Seldon Price designed, first a block of shops and offices around a tiled courtyard and later home to La Brea Bakery and Campanile. After Campanile closed in 2012, Walter and Margarita Manzke stripped the space back to its original brick, tile and ironwork. It is listed in the MICHELIN Guide and is a frequent entry on the Los Angeles Times 101 Best list, where it ranked fourth in 2024.
Walter Manzke began his fine dining career in Los Angeles with Joachim Splichal at Patina and cooked with Ferran Adria and Alain Ducasse before returning to the city. His menu is French in technique and Californian in instinct, written daily around the season: Weiser Farms produce, Dover sole a la meuniere, Burgundy escargot baked en croute, and Liberty Farms duck.
Margarita Manzke leads the pastry side and won the James Beard Award for Outstanding Pastry Chef or Baker in 2023. Her hand shows from the first course, when the baguette arrives with Rodolphe Le Meunier butter from Normandy.
The front of the building is a casual bakery, cafe and bar, open daily from 8am to 2pm, with a weekend brunch menu. The more formal dining room in the back serves dinner Tuesday through Saturday. For groups of 8 to 16, the Kitchen Tables and the Alcove host a family-style, multi-course dinner built from the restaurant's seasonal dishes.
