Republique earns its place as a cornerstone of Los Angeles dining the hard way - through a room that stops you cold and food that makes the architecture feel earned. The building dates to 1928, constructed by Charlie Chaplin and designed by architect Roy Seldon Price. When Walter and Margarita Manzke took the keys in 2013, they stripped the space back to its original bones: exposed brick, arched ceilings, tiled floors, wrought ironwork. What you walk into is not a theme. It is a room that has always looked exactly like this.
Walter Manzke trained under Joachim Splichal at Patina and later cooked alongside Ferran Adria and Alain Ducasse before coming home to California. His menu is French in technique and Californian in instinct - the produce comes from Weiser Farms and JJ's Lone Daughter
