Michelin star masa counter with no sign and no menu in Roma Norte
Expendio de Maiz Sin Nombre is the Roma Norte masa counter that won a Michelin star in 2025 and holds it in the current Mexico guide, after a run with a Bib Gourmand. There is no sign on Avenida Yucatan, no printed menu and no reservation book. The whole operation is organized around heirloom corn, nixtamalized and ground in house, cooked to order a few feet from where you sit.
Ordering is a conversation, not a transaction. The cooks say what came in that morning, then send out a rolling sequence of tortillas, sopes and huaraches dressed in a changing variety of seasonal ingredients and sauces, until you tell them to stop. Tableside salsas carry real heat, and the bill lands as a running tally at the end.
The room is barely a room: an open storefront with four communal tables and a kitchen that cooks and cooks until diners tap out. It mixes neighborhood regulars with people who crossed the city for it, and it is loud, informal and genuinely uncomfortable at peak hours, which is part of why it works. Payment is cash only.
Walk up and put your name in with the staff; the wait is shortest in early mornings and mid afternoons on weekdays.
