Condesa cafe by day, one-star kitchen by night
Gaba runs two lives in one small Condesa room: a low key cafe by day, a chef driven restaurant after dark. Concrete floors, exposed brick and a clean rectangular space make a deliberately plain stage, and the cooking supplies the drama. Menus move with the season and food arrives as shareable plates rather than a fixed tasting sequence.
Chef Victor Toriz built the place after a decade in other people's kitchens: three years at Bestia in Los Angeles, then Here's Looking At You, followed by Arca in Tulum and Emilia in Mexico City. Gaba is the first project of his own.
