La Once Mil takes its name from 11000, the postal code of Lomas de Chapultepec, and its argument from one line the founders live by: tacos in earnest, not in series. Corn is nixtamalized in house and tortillas are pressed and griddled to order in several varieties. Salsas are made fresh daily, and the rest of the budget goes into the meat.
Cesar de la Parra opened the taqueria in 2024 with Enrique Glennie and Jimena Gutierrez, chasing a gap he kept hitting as a lifelong taco obsessive: nobody was applying premium product and restaurant discipline to street food. The room answers that, modern and relaxed, with an open grill, counter seats and careful plating but no solemnity.
