Blanco Colima occupies one of the most recognizable buildings in Roma Norte, a restored mansion from the end of the Porfiriato on Calle Colima. It has been running close to a decade and was among the first places in the neighborhood to argue that avant garde food, a serious bar and a late night crowd could share the same address without any of the three suffering.
The kitchen works a contemporary Spanish register with Mexican accents, ingredient led and rebuilt with the seasons. The house image is a white canvas gradually painted in with whatever the market gives up, which in practice means the menu rotates rather than sits. Cocktails and music are treated as part of the meal rather than a preamble, and the mixology list is one of the reasons people stay past dessert.
