Fonda Mayora is chef Gerardo Vazquez Lugo's Condesa project, the younger counterpart to Nicos, the Claveria restaurant his family has run for decades. The premise is a fonda in the honest sense: Mexican home cooking done properly, without foams or reinvention, from a corner dining room on Campeche with a small outdoor patio.
Breakfast is the main event and the reason people queue. Chilaquiles, huevos encamisados folded into a two-tone tortilla, and a concha served with nata are the orders that built the reputation, and the room fills early with Condesa regulars. Later in the day the kitchen turns to guisados and a full comida, with a short list of Mexican wine and beer alongside.
