Bourbon Steak sits inside the Fairmont Scottsdale Princess in North Scottsdale, and the setting does a lot of the work: the resort spreads across the desert at the foot of the McDowell Mountains, and the restaurant opens onto a fireside terrace that is the reason to book the early side of the evening between October and April.
The kitchen is Michael Mina's steakhouse format adapted to where it sits. Premium cuts and seafood anchor the menu, with the rustic register of the Southwest running through a room that is otherwise a polished, world-class steakhouse.
Dinner runs Sunday through Thursday from 5:30pm to 9pm and Friday and Saturday from 5:30pm to 9:30pm. The bar, lounge and fireside terrace open half an hour earlier, at 5pm, which is the window worth taking if you want the terrace while there is still light on the mountains.
