Masayoshi is a one-Michelin-star omakase counter on the Fraserhood and Kensington stretch of Fraser Street, set a deliberate distance from Vancouver's downtown core. It is a genuinely small room, so demand outruns supply almost every night, and the seat is one of the hardest to land in the city. This is the real edomae experience, a chef's-counter meal priced and paced as such, not a conveyor-belt sushi bar.
Chef Masayoshi Baba trained in Japan's Yamaguchi and Fukuoka prefectures, then spent roughly a decade in Vancouver under Hidekazu Tojo before opening his own room. The restaurant holds 24 seats, which is what makes counter seats worth chasing on a busy night. Service runs two seatings a night, generally at 6:00 and 8:30, Monday through Saturday.
The menu is hyper-seasonal, built entirely around what chef Baba finds best that week across appetizers, nigiri and a chef's dessert, so no two visits track exactly the same.
Weeknights are the best shot at a counter seat, since weekends book out first. The omakase runs $245 per person at a table or $260 at the sushi bar, and the seating time is firm, since this is a paced meal. Dress is smart-casual: a jacket will not feel out of place, and it is not required.
