Sushi Hil is a sunlit sushi room on Main Street in Vancouver's Mount Pleasant neighborhood, carrying a Michelin Bib Gourmand, the Guide's shorthand for good quality at good value cooking. The dining room stays relaxed even as the fish is treated seriously, built on seasonal ingredients and high-quality fish.
Chef Hilary Nguy has more than 20 years behind the counter. She started in 2003 at Kitsilano's Temaki Sushi before opening Sushi Hil in 2022 at 3330 Main Street. The dining room is bright and contemporary, with natural light, blonde wood and a clean look, and the best seats are at the counter, where you can watch Nguy work.
The menu is sushi and sashimi forward. Michelin's own review points to a dish of Japanese sweet prawns served over crushed ice with a dab of wasabi and their just-removed head alongside, plus otoro, ikura, chopped tuna and black throat perch, or nodoguro, and calls the pieces jewel-like. The format is flexible, so you can graze a la carte or work through the chirashi and nigiri sets.
Sushi Hil serves lunch and dinner Monday through Saturday and is closed Sundays and holidays.
