Sushi Hyun is a one-Michelin-star sushi counter in Vancouver's West End, awarded its star in the Michelin Guide's 2025 Vancouver selection. Chef Juhyun Lee, who leads the kitchen, was also named the Michelin Guide Vancouver 2025 Young Chef Award winner, and the counter draws serious demand for it.
The counter itself is built from hinoki wood crafted from a tree more than two centuries old. Lee trained abroad before returning to Korea, where he spent nearly two years working in Gangnam's fine-dining scene, and he imports his own kombu and katsuobushi from Japan to focus on the fundamentals. The result is Edomae-style nigiri with a Korean sensibility, precise and quietly confident. A signature dish is a comforting rice preparation of fried karei flounder, a nod to his Korean background, served alongside the tempered nigiri. The name Hyun comes from the chef's own name and carries a sense of bright and positive.
Seating is limited to a small hinoki counter, and dinner runs Tuesday through Saturday across two seatings, with the restaurant closed Monday and Sunday. Given the size of the room, this is a room to book ahead.
