A one-Michelin-star, six-seat West End counter where chef Juhyun Lee brings a Korean sensibility to edomae nigiri.
Sushi Hyun is one of Vancouver's newest one-Michelin-star rooms and, at six seats, one of its smallest. Chef Juhyun Lee was also named the Michelin Guide Vancouver 2025 Young Chef Award winner, and the counter draws serious demand for it.
The counter is built from hinoki wood imported from Japan and aged some 200 years, seating just six with plans to grow to eight. Lee trained in Korea and Japan, including time at two-Michelin-star kitchens, and sources seafood from Tokyo's Toyosu market. The result is Edomae-style nigiri that is precise and quietly confident, run alongside seasonal dishes. A signature turn is a comforting rice dish of fried karei flounder, a nod to his Korean background, set among the tempered nigiri.
