The Fulton Market steakhouse turns over to a DJ-led lounge after ten.
Carbon runs as two things in one building, and the second begins once dinner service winds down. From around ten the dining room gives way to a lounge, and from eleven on Thursday through Saturday the room is DJ-led and stays open into the early hours.
The space helps. Roughly five thousand square feet across two levels, it has exposed ceilings, brick archways, living green walls and a mezzanine that looks down over the floor, so the room has height and sightlines that a converted restaurant usually lacks. Music is kept at conversation level through dinner and lifts as the room turns.
Bottle service is offered from the turn onward, and booths can be reserved for the lounge hours specifically rather than as a dinner booking. It suits a group that wants to start with a proper meal and stay in the same room rather than move on.
