A modern Fulton Market steakhouse across two levels.
Carbon is a modern steakhouse on Lake Street in Fulton Market, built across roughly five thousand square feet and two levels. Exposed ceilings, brick archways and living green walls give the room an industrial frame softened by planting, and a mezzanine looks down over the main floor.
The kitchen is built around steak and the raw bar, with caviar service alongside the cuts. Music is held at conversation level through dinner, which is deliberate - the room is designed to work as a restaurant first and to change character later rather than compromise the meal.
That change is worth knowing about when booking. Dinner service runs from five; from around ten the room begins turning over to a lounge, and on Thursday through Saturday it continues as a DJ-led space into the early hours. An early table is a quiet dinner; a late one puts you in the room as it shifts.
The restaurant is closed to the public on Monday and Tuesday for private events. Reservations are taken through the venue's own booking system, and the late-night lounge is listed separately on MyRSVP.
