Gibsons turned a Rush Street corner in the Gold Coast into a Chicago icon. It opened in May 1989, and this is the original Gibsons, the room that launched everything else carrying the name. It is not a Michelin-starred restaurant and does not pretend to be; its reputation rests on something older and steadier, a classic American steakhouse that draws celebrities, tourists and locals alike.
What makes it matter is the beef. Gibsons serves its own Gibsons Prime Angus, USDA Certified Prime beef sourced from producers in the upper Midwest, grain-fed for up to 120 days and aged for a minimum of 45 days, alongside Gibsons Grassfed Australian cuts.
The room is loud in the best way, and the menu is exactly what a steakhouse should be. Start with W.R.'s Chicago Cut, the house signature, or share the Big Porterhouse across the table. Planked Lake Superior whitefish and whole spit-roasted chicken are there for anyone not ordering steak, with creamed spinach and a double baked potato on the side. Dessert runs from macadamia turtle pie to chocolate mousse pie and carrot cake with walnuts.
