Founded in 1989 by Hugo Ralli and Steve Lombardo, this is the original Gibsons, the room that launched everything else carrying the name. It is not a Michelin-starred restaurant and does not pretend to be; its reputation rests on something older and steadier, the clubby, see-and-be-seen power-dining energy Chicago has trusted for decades.
What makes it matter is the beef program. Gibsons runs its own USDA Prime line, the Gibsons Angus brand, grain-fed and aged 45 days and sold under its own label. Few steakhouses in the country control their supply this closely.
