Founded in 1989 by Hugo Ralli and Steve Lombardo, it is the original Gibsons, the room that launched everything that carries the name today. This is not a Michelin-starred restaurant and we will not pretend otherwise; its reputation rests on something older and steadier, the kind of clubby, see-and-be-seen power-dining energy that Chicago has trusted for decades.
What makes it matter is the beef program behind it. Gibsons runs its own USDA Prime line, the Gibsons Angus brand, grain-fed and 45-day aged, sold under its own label. Few steakhouses in the country control their supply the way this one does.
