Rose Mary is Top Chef winner Joe Flamm's debut restaurant, in the Fulton Market district of the West Loop and listed in the Michelin Guide. Flamm blends his Italian heritage with the bold, bright flavors of Croatia into what he calls Adriatic drinking food, a seasonal menu that is rustic yet refined.
The name honors his grandmothers, Mary and Mary Rose, and the rosemary that grows along the Italian and Croatian coasts. Studio UNLTD designed the room after the konobas, the family-run taverns of Croatia, with whitewashed brick, honey-colored oak, pale stone, red clay and deep azure tile, and the space is a boisterous one.
Handmade pastas anchor the current menu: tortellini djuvec with red pepper, eggplant and preserved zucchini, gnocchi with beef cheek pasticada, and radiatore cacio e pepe. The burek with beef, onion and mozzarella and the cevapi with lepinja, ajvar and kajmak bring the Croatian side, while larger plates run to a bone-in lamb saddle and a 24 oz. bone-in ribeye. Dessert brings palacinke with macerated peaches, and the wine list pours Croatian bottles by the glass.
Dinner runs Sunday through Thursday from 4:30 PM to 10 PM and Friday and Saturday from 4:30 PM to 11 PM. Reservations open 30 days in advance.
