Sushi-san is the River North sushi bar that made hip-hop and high-grade fish feel like the same idea. It is led by Master Sushi Chef Kaze Chan, who has shaped Japanese cooking in Chicago for nearly 30 years, and its seafood includes Balfego bluefin tuna from Spain and catches from Fukuoka and Tokyo.
The soundtrack is old-school hip-hop, the beer is ice-cold Asahi, and the grill turns out binchotan-roasted meats. The bar pours what it calls the largest list of Japanese whiskies in America, 182 options, and upstairs, The Omakase Room at Sushi-san seats ten for an 18-course omakase, Wednesday through Saturday.
Crispy rice is the house fan favorite, and the Spicy Tuna Crispy Rice, griddled pressed rice topped with spicy tuna, sesame and green onion, leads the menu, with the spicy tuna roll from the handroll list as the follow-up. For a fuller commitment, the Mr. Maguro San-Set walks through Balfego akami, chutoro and otoro across sashimi, nigiri and a maki roll, and the Truffle Shiitake maki gives the vegetarians at the table something to fight over. Sushi-san serves lunch, dinner and late-night eats daily: Monday through Thursday 11 am to 10 pm, Friday 11 am to 11 pm, Saturday noon to 11 pm and Sunday noon to 10 pm.
