Experimental Beach sits on the shoreline at Cap des Falco, tucked into the Las Salinas salt reserve. Sunbeds and Balinese beds are dotted across the sand, the sea is calm, and the day moves at an easy pace from a late-morning swim to a long lunch in the sun.
The bar is built around original cocktails made with fresh, house-made ingredients, from the Old Cuban with rum, mint and cava to the Pineapple Express, made to share. There is rose by the glass and sangria, and a Mediterranean menu from chef Alexander Larrea that draws on Ibicenco cooking: pan con tomate, patatas bravas, bluefin tuna tataki, black cod, arroz negro with red prawns, and salt-baked sea bass for two.
Late afternoon is when the sofas and low tables of the sunset lounge fill up and the sun sinks into the horizon. Jazz drifts across the dinner tables as night falls, then a DJ takes over and carries the evening on under the stars. The club is open every day from 10am to midnight, sunbeds are reserved from 10am to 1pm, and the restaurant serves continuously from 1pm to 11pm.
