Not every great Ibiza table sits on the sand. Casa Maca makes its case from the hills of Can Palau, just outside Ibiza Town, inside a 300-year-old farmhouse that has been lovingly restored into an intimate rural retreat with the Dalt Vila skyline laid out in the distance.
What sets it apart is the farm. The kitchen fuses global gastronomy with local, organic ingredients, and the most local of all come from the finca's own kitchen garden, so the grilled meats, fresh seafood, vegetables and herbs often travel only a few steps from soil to plate.
Dinner here is an alfresco, open-fire affair. The dining space sits right beside the farm, built around an impressive grill where meat, fish and just-picked vegetables cook over open flame, while live artists and chillout DJs with a world-music lea
