Aubergine sits in a white plastered finca on the country road between Santa Gertrudis and San Miguel, in the farmland of northern Ibiza. Turning in off the lane feels like stepping into the quiet, agricultural side of the island that the club crowd never sees.
The kitchen is farm-to-table in the literal sense. Vegetables, fruit and herbs are picked from the Atzaro Vegetable Garden, a three-hectare organic garden, the wines are organic and local, and the water is treated in-house by osmosis. Meat and fish are sourced locally, and the menu shifts with the season.
Expect wholesome Mediterranean cooking: a kale salad with pear and pomegranate, roasted aubergine carpaccio with feta and pistachios, buffalo ricotta ravioli and grilled sea bass with green mojo, plus a barbecue menu from 7pm with ribeye, lamb chops and corn on the cob. Vegetarian and vegan options run through the whole menu. On Sundays the finca adds art and live music, with Flamenco Puro alternating with Eco & Raiz.
Long lunches happen on the garden terraces, and at night dinner moves beneath dimmed pergolas and trees. When the air cools, the dining rooms inside the finca, with their sabina-beamed ceilings, take over, and there is a boutique on the grounds. The restaurant is open from noon to midnight.
