Aubergine sits inside a restored white finca on the country road that links Santa Gertrudis to San Miguel, in the green farmland of northern Ibiza. It is the garden restaurant of the Atzaro estate, and turning in off the lane feels like stepping into the quiet, agricultural side of the island that the club crowd never sees.
The kitchen is farm-to-table in the literal sense. Vegetables, fruit and herbs are picked from Atzaro's own organic garden, the wine is organic and the water is purified on site. Meat and fish are sourced locally, and the menu shifts with whatever the season is giving.
Expect bright, wholesome Mediterranean cooking: kale and market salads, aubergine carpaccio, grain and Buddha bowls, grilled meats and fresh fish, with generous vegetarian and vegan options throughout. The setting is the draw. Tables sit in a courtyard garden strung with lights among orange trees, lavender and fragrant herbs, and the property also holds an art gallery, a boutique and a regular live-music program.
Warm evenings belong outside; when the air cools, dining moves indoors to rustic rooms with white plastered walls and beamed ceilings.
