Tucked into the pine-covered hills of San Jose, Cova Santa is built around a genuine natural cave that descends more than twenty-five meters, with stalactites and stalagmites shaped by water over thousands of years. Discovered in the 15th century, the cave was once a refuge for pirates and smugglers, and part of it now serves as the wine cellar.
The night moves in stages. Dinner is served on a multi-level terrace that looks onto the stage, the open-air music usually stops around midnight, and the party then moves inside to an intimate underground club. Dinner does not end the evening here, it opens it. The kitchen builds its menu as a journey around the world, from Iberian ham and Josper-grilled lobster to tuna tartare with kimchi and sea bass in the Tom Kha Kai style.
Promoters such as Woomoon, Masaka Africana and Pantheon take over the whole estate for immersive day-to-night parties, where guests watch the sun set over the mountains before the music heads indoors. The crowd is grown-up and in the know: couples in for the food, groups who came for a specific promoter night, and islanders who like to start their dancing outdoors.
