Tucked into the pine-scented hills of San Jose, Cova Santa is built on top of a genuine natural cave that runs more than twenty-five meters deep and was first opened to the public back in the 1950s. Almost nowhere else in Ibiza offers a setting with this kind of geology and quiet drama.
The concept is what the team calls a gastroclub: a proper restaurant and world-class cocktail program that flows straight into a dancefloor as the night takes over.
