Mediterranean beach restaurant on Es Cavallet, with sunbeds on the sand and Formentera on the horizon
El Chiringuito sits on Es Cavallet beach on the south coast of Ibiza, a few minutes from Ibiza Town, with Dalt Vila on one side of the view and Formentera on the other. The beach runs beside the salt flats, so the house describes itself as sitting between the flamingos and the sea.
It was founded by Olivia Fleury and Jonathan Thorogood and is now in its 18th season. Chef Angel Zapata leads the kitchen with a Mediterranean menu meant for sharing, and wherever possible the fresh produce comes from Farm Agricultural Lab in San Miguel, an organic permaculture farm about 12 kilometers away.
The kitchen opens at 9:30 in the morning for breakfast, but lunch is the main event: oysters, tuna tartare with avocado mousse, calamari fritti with lime mayo, spiny lobster done Formentera style with free-range eggs and potatoes, and sea bass baked in a salt crust for two. Blue lobster orzo is on the rice and pasta list, and there is an Oscietra caviar service for the table.
Out on the sand there are sunbeds, double beds and Balinese beds, with food and cocktails brought down from the bar, so a late breakfast can easily turn into a long lunch in the shade. Restaurant tables are held for 20 minutes past the booking time, and parties of up to nine have the table for two hours.
