Bavette's Steakhouse & Bar at Park MGM calls itself a stylish departure from the traditional steakhouse, with French flair and none of the formality. It is one of two Bavette's, alongside the Chicago room, and serves dinner from 4:30pm nightly, until 10pm Sunday through Thursday and 11pm on Friday and Saturday. Walk-ins are welcome at the bar, where the full menu is served.
The menu is built around steak. The dry-aged bone-in ribeye and New York strip are both aged 42 days, the Chicago-cut ribeye runs 16 ounces, and the ribeye steak frites comes with bearnaise and hand-cut fries. Roasted bone marrow arrives with caramelized red onion jam, and the chilled seafood list runs from oysters and shrimp cocktail to three towers, Maude's Seafood Tower among them.
Cocktails stay classic, from a Vesper martini to a Penicillin and a short list of old fashioneds, and dessert means Chocolate Cream Pie or Lemon Meringue Pie. For a private dinner the Parlor seats up to 35, and a partial buyout of the main dining room takes up to 75.
