Tom Colicchio's Craftsteak is the chef's steakhouse in the District at MGM Grand, 3799 Las Vegas Boulevard South. Colicchio, known to television audiences from Top Chef, built it around sourcing: beef from top ranchers and artisanal producers, dry-aged in the restaurant's own aging room, with ingredients from small family farms and fish from day-boat fishermen.
The restaurant seats 270, with two private dining rooms beside the main room that can be booked separately or combined. Several ages of beef are on the menu at any given time, so a table can taste how different ages change flavor and texture, and the drinks list covers wine, bourbon and scotch.
The current menu is organized by ranch and grade: bone-in New York strip and ribeye from Meyer's Ranch, Double R Ranch filet mignon, Snake River Farms wagyu, prime dry-aged cuts, a 42-ounce prime tomahawk and Japanese certified A5 wagyu. Starters include lobster bisque with tarragon, wagyu beef carpaccio and warm frisee with farm egg and smoked bacon, seafood runs to spice-roasted lobster with Calabrian chili, and cinnamon monkey bread with toffee sauce closes the meal. The Two Smoking Barrels cocktail is smoked at the table.
Smoked prime rib is served every Thursday and Friday, and the Crafted Cut Experience, a chef-selected family-style feast of appetizers, sides, steaks and a shared dessert, is built for groups of four or more. Dinner is served seven nights a week, and the dress code is smart casual.
