Wakuda is chef Tetsuya Wakuda's modern Japanese restaurant in the Palazzo lobby at The Venetian Resort. The chef first made his name with Tetsuya in Sydney, and his Waku Ghin at Marina Bay Sands in Singapore holds a Michelin star. The Las Vegas room takes its cue from Tokyo's Golden Gai, setting traditional Japan against modern design and art, with the Golden Gai Cocktail Club inside.
The menu covers sushi, nigiri, sashimi and yakimono, built on Japanese product: A5 Wagyu from Kagoshima, Kyoto and Hyogo, where Kobe beef comes from, along with Hokkaido uni, snow crab and Japanese scallop. Start with the chef's selection of nigiri or sashimi, then move to the robata skewers and the Wagyu for the hot side of the table.
Thursday through Saturday, the Omakase Room seats a handful of guests behind a hidden bar, with seatings at 5pm and 7:30pm. The chef builds each course around how the guests respond as the meal goes on, and the menu cannot be changed for dietary restrictions. Dinner in the main room runs nightly from 5pm to 10pm, and the cocktail lounge stays open until 11pm.
