The Polo Lounge at The Beverly Hills Hotel starts its day with breakfast at 7am, and for generations its booths have filled with stars and Hollywood deal-makers. The hotel opened on May 12, 1912, before the city of Beverly Hills existed, and the Polo Lounge followed in 1941, named after Hernando Courtright, who ran the hotel, agreed to display his friend Charles Wrightsman's polo trophy in the bar.
Architect Paul R. Williams reimagined the room, and the candy-striped ceiling still sets its tone. There are power booths, seats that face the doorway and alcoves for a quieter table. A piano player accompanies lunch and dinner, and the patio, surrounded by palm trees and flowers, works as well for a sunny breakfast as for a night of soft music. On Sundays, brunch on the patio comes with light jazz.
The kitchen serves American cuisine with an Italian edge, plus a daily specials board. The McCarthy Salad, named after polo-playing millionaire Neil McCarthy, is the house signature: iceberg and romaine with grilled chicken, egg, beets, tomato, cheddar, smoked bacon and avocado. Dinner adds Dover Sole Meuniere with brown butter and lemon, a dry-aged tomahawk for two, and signatures such as the tortilla soup and steak tartare. The chocolate souffle takes 20 minutes to bake, so order it early.
Dress for the occasion: no hats, ripped denim, swimwear or sportswear, and no shorts for men after 4pm. Ask for the patio for breakfast or an early evening, and a booth for anything that matters.
