Aitana is the Mediterranean dining room on the first floor of Torre Virreyes, the Pedregal 24 tower on the Lomas de Chapultepec and Molino del Rey line. It opened in 2016 as chef Alberto Ituarte's project and has settled into the role of the business lunch and long dinner room for the offices and houses around it.
The cooking is Basque and Spanish tradition rebuilt with Mexican product. The pintxos list is the tell: San Sebastian skewers of anchovy, olive and pickled pepper on house bread, cider marinated morcilla with piquillo peppers, potato cake with spicy tomato and Iberico dust. From there it moves through Cinco Jotas acorn fed Iberico, Iberico ham and octopus croquettes, Spanish tortilla, Asturian fabada and Andalusian gazpacho, then into foie terrines, tuna tartare, habanero scallo
