Open-fire grill meets sushi, then turns into a party
Animal sits a block off Masaryk on Calderon de la Barca and is built to do two jobs in one night. Early it is a grill house: a wood and charcoal kitchen sending out chorizo tacos with bone marrow, arrachera barbacoa and premium cuts cooked over open fire.
Later the lights drop, a DJ takes over and the dining room slides into a party without anyone having to move rooms. That deliberate handover is the whole concept. The cooking is Mexican with a serious Japanese streak, running an omakase and sashimi program alongside the grill, and the two halves of the menu are meant to be ordered together and shared.
Desserts are made for the table, with the Fosfo Cake the one dessert that keeps showing up on everyone's plate. The crowd is Polanco at its most social: birthdays, anniversaries, agency tables and groups who booked dinner and stayed for four hours.
Mixology is taken as seriously as the food, and the room is loud and lit for it. Service is quick and practiced, and the floor team is used to running large parties.
