Zero waste cooking from the Xochimilco chinampas
Baldio opened in 2024 as Mexico City's first zero waste restaurant, founded by Pablo Usobiaga with his brother Lucio. It carries a Michelin Green Star, the guide's sustainability distinction, and is the only restaurant in the city to hold one. The premise is not a garnish on the concept, it is the concept: the zero waste discipline runs through purchasing, prep, service and even the paper the menus are printed on.
Most produce arrives from the chinampas of Xochimilco, the floating agricultural islands still farmed with pre Hispanic methods, supplemented by dozens of small producers across the country. Vegetables, native corn, herbs and grains drive a menu that changes constantly with what the growers cut that week, alongside freshwater fish and whole animal butchery. Water is purified in house and trim becomes ferments, stocks, vinegars and preserves instead of waste.
The room in Condesa is calm and material driven, warm timber and low light, with an open kitchen that lets you watch the pickling and fermentation library at work. Service runs afternoons into the evening Monday through Saturday, and the restaurant is closed Sundays.
