Charcoal-fired USDA Prime cuts and wagyu in Polanco
Dante Brasa y Fuego is a modern steakhouse on the corner of Edgar Allan Poe and Emilio Castelar in Polanco, built around one rule the house states plainly: less frying, more fire. Almost everything crosses the charcoal, from the premium cuts down to the hearts of lettuce and even the chocolate brownie, and the grill itself is a Mibrasa charcoal oven that gives the kitchen tight control over smoke and heat.
Chef Dante Ferrero sources cuts from more than one country, which is the point of difference here: USDA Prime New York strip and rib eye, and Japanese A5 wagyu, all butchered and aged for the room. The menu is not only beef. There is a ceviche the kitchen is quietly proud of, grilled vegetables, and a dessert list that also passes through the fire. Portions are generous and the wine list is built for sharing a large cut.
The dining room is open plan around the grill, dark and loud in the good sense, with music and a bar that keeps going past midnight from Tuesday to Saturday. It has become one of the default Polanco choices for business dinners and for long celebratory tables.
