El Tigre Silencioso is a gourmet cantina in Casa Balta, a 1914 house on Colima in Roma Norte where the original tilework, mouldings and stair rails were left alone rather than stripped out. The result is a room that behaves like an old neighbourhood bar and cooks like a restaurant, which is precisely the collision it was designed for.
It comes from David Castro Hussong, the chef behind Fauna in Valle de Guadalupe, working with pastry chef Maribel Aldaco Silva. The menu is northern Mexican in accent and built for sharing: small plates that arrive fast, land loud, and are meant to be eaten with a drink already in hand rather than studied in silence.
