El Tigre Silencioso is a gourmet cantina in Casa Balta, a 1914 house on Colima in Roma Norte where the original tilework, moldings and stair rails were kept, not stripped out. The result is a room that behaves like an old neighborhood bar and cooks like a restaurant, which is precisely the collision it was designed for.
It comes from David Castro Hussong, the chef behind Fauna in Valle de Guadalupe, working with pastry chef Maribel Aldaco. The menu is northern Mexican in accent and built for sharing: small plates that arrive fast, land loud, and are meant to be eaten with a drink already in hand, not studied in silence.
The drinks list is the other half of the argument. Vermouth is poured on tap from countertop coolers set on the bar, alongside a deep spirits and wine selection, and the bar stays busy late into the night. The Michelin Guide lists the house in its Mexico selection and it also appears on 50 Best Discovery, but the mood on the floor stays closer to a good cantina than a dining room.
