Basque and Spanish fire cooking overlooking Parque Lincoln in Polanco
Emilio sits on the avenue it is named after, looking over Parque Lincoln in Polanquito, and it is one of the most openly hedonistic rooms in Polanco. Grupo Carolo relaunched the address as a Basque and Spanish house, with the group's gastronomic direction under Cesar de la Parra and the kitchen run day to day by chef Nicolas Roman, and the brief is simple: make a guest in Mexico City feel like they just sat down in Spain.
The kitchen is built around rice cooked over a wood fire, which concentrates the stock and lacquers the grains. Around the rices sit the Spanish standards done properly, from Iberico ham and croquetas to fish and shellfish. Emilio has a cigar room and private dining rooms for different occasions, plus live music on select nights.
The terrace over the park is the seat everyone wants, with some of the best park views in this stretch of Polanco, especially at breakfast. Later the room turns into a long dinner and sobremesa spot with a heavy wine list.
