Fogo de Chao on Alejandro Dumas is the Polanco branch of the Brazilian churrascaria group, and it runs the full rodizio service. Gauchos work the room with skewers straight off the fire and carve at the table: picanha, rib eye, filet mignon, lamb, beef ancho and linguica, brought around continuously until you flip your card from green to red.
The other half of the meal is the market table, a long gourmet salad bar of cured meats, cheeses, smoked salmon, imported vegetables and Brazilian sides such as pao de queijo, caramelised bananas and polenta.
