Chef Juan Cabrera reworks Roma Norte fonda classics with modern polish
Fonda Fina works a simple idea hard: take the dishes that define an everyday Mexican fonda and cook them with the sourcing and precision of a serious kitchen. The menu runs through guisados, antojitos and comida corrida staples built from produce brought in from several Mexican states, with the menu changing through the seasons instead of staying fixed all year.
Chef Juan Cabrera leads the kitchen. The cooking stays recognizable, familiar flavors and familiar formats, but the plating, the salsas and the mezcal and wine list all read contemporary.
The room is small and country chic, wood and warm light, closer to a neighborhood dining room than a destination restaurant. It fills for late lunch and stays busy through dinner, with a shorter Sunday service that ends in the early evening. Medellin 79 puts it a few minutes from Alvaro Obregon and the rest of Roma Norte on foot.
