Guzina Oaxaca is chef Alejandro Ruiz's embassy for Oaxacan cooking in Mexico City. The name means kitchen in Zapotec, and the premise is straightforward: bring endemic Oaxacan ingredients to Polanco and cook them with the same authorship Ruiz built at Casa Oaxaca.
Executive chef Carlos Galan runs the day-to-day kitchen, working through moles, masa-based antojitos and Oaxaca-style grilled meats and seafood, with one of the deepest mezcal lists in the neighborhood behind the bar. Service starts at breakfast and runs straight through to late dinner, which makes it a rare Polanco room you can use for a nine in the morning meeting or an eleven at night mezcal.
