A genuine Madrid taberna transplanted to the Condesa
La Cocina del Bizco brought a genuine Madrid taberna to Hipodromo Condesa when it opened in 2024, and the city has not stopped talking about it since. The room is small and loud in the right way: tiled walls, vermouth on tap, tinned seafood stacked behind the bar, football on the television and Atletico de Madrid memorabilia throughout.
The chef is Jesus Pedraza, who trained at Madrid's hospitality school before moving to Mexico. He cooks the food of his native Madrid: tortilla de patatas, gildas, jamon croquetas, a creamy arroz meloso and paella, alongside a wall of imported conservas.
Drinks follow the same logic, with cana beer, vermut de grifo and a short Spanish wine list built for sharing plates. The Guia Mexico Gastronomico named it Opening of the Year for 2026, which has only made the pavement tables on Ometusco harder to get.
