Limosneros occupies a restored colonial building on Allende, a short walk from Tacuba in the Centro Historico, with thick stone walls, exposed volcanic rock and low light. The kitchen treats Mexican ingredients as the whole point of the exercise: native corn, endemic herbs, seeds and chiles handled with traditional technique and then pushed somewhere new.
Chef Atzin Santos leads the kitchen alongside sous chefs Ismael Ramirez and Carlos Quezada. The restaurant runs both a la carte and a tasting menu, and the bar is built around mezcal and other agave distillates with Mexican wine alongside. The result is a room that reads as fine dining without losing the plainly Mexican character of what is on the plate.
