Jair Tellez cooks Baja California in Condesa
MeroToro is chef Jair Tellez's Condesa dining room on Avenida Amsterdam, and it is one of the restaurants that taught Mexico City to take Baja California seriously as a cuisine. It appears in the current Michelin Guide Mexico. Tellez also built Laja in the Valle de Guadalupe, and MeroToro is the city expression of the same thinking: northern Pacific ingredients handled with restraint.
The name splits the difference between mero, the grouper, and toro, the bull, which is the menu in two words. Fish and shellfish from the Baja coast share the card with goat, beef and lamb from the peninsula's ranches, plus vegetables treated as main events. Plates are simple and direct rather than decorated, and the wine list is a serious argument for Mexican bottles, Valle de Guadalupe in particular.
