Sonoran steakhouse on Paseo de las Palmas
Palominos started in Sonora in 1974 and brought northern Mexican beef culture to the capital. The Palmas branch is the newest of its two Mexico City rooms, set on Paseo de las Palmas in Lomas de Chapultepec, and it is the most polished expression of the brand.
Executive chef Alejandro Rascon works with national and imported beef, including Australian Black Onyx and the house filete al bacanora, a grilled tenderloin finished tableside on a Himalayan salt block with a chiltepin butter and flamed with bacanora. Tomahawks, rib eye aguachile, tortillas sobaqueras, frijoles maneados and coyotas fill out a menu loyal to Sonoran habits.
