Wood fire country bistro over the Angel
Salazar occupies the eighth floor of Reforma 333, directly across from the Angel de la Independencia, and the first surprise is the building it sits in: a timber structure raised on the terrace that reads like a barn dropped into the middle of Paseo de la Reforma. Glass on three sides means almost every table gets the monument, and the terrace gets it head on.
The restaurant comes out of the Edo Kobayashi group, with Edo Kobayashi as creative director and the kitchen run by Allan Yanez, who trained in the Basque Country at Martin Berasategui, Akelarre and Azurmendi. What he cooks here is a country bistro translated to the city: wood fire, short menu, seasonal sourcing and a stated policy of respecting fishing and hunting closures.
