Sartoria is chef Marco Carboni's modern osteria in Roma Norte, and it holds a listing in the Michelin Guide Mexico. Carboni trained in the kitchens of Massimo Bottura, Gordon Ramsay and Dan Barber, working through Italy, Barcelona, London and New York before settling in Mexico City to open the restaurant.
The name means tailor's shop, and the kitchen runs like one. Pasta is made by hand every day to Italian technique, then cut with whatever the small scale producers supply that week. Around it sit antipasti, seasonal vegetable plates and a short list of secondi, all built on the same product first, season first logic. The wine list runs Italian with Mexican and natural bottles worked in.
The room is warm, tiled and softly lit, matching the restaurant's own description of itself as a dynamic, cosmopolitan osteria. It manages to be a proper dinner restaurant and a place you can eat a plate of pasta at the bar. Service runs from one in the afternoon to midnight Monday through Saturday, an hour earlier on Sundays.
