Testal specializes in what it calls Cocina Mexicana de Origen, built on regional recipes from founder Roberto Tinoco's own family in Santa Clara del Cobre, Michoacan. The name comes from testal, the ball of masa pressed into a tortilla, and the Centro Historico branch has operated since around 2015 at Dolores 16, on the corner of Independencia, between Avenida Juarez and the Alameda side of the Centro.
Tinoco, who studied hotel management, is Testal's founder and general director; the Centro Historico kitchen itself is led by one of his aunts. The menu draws on recipes passed down through his mother, grandmother and aunts, including dishes such as cerdo con verdolagas (pork with purslane) and sopa de habas, alongside chile en nogada in season and the restaurant's braised pork leg.
The room is casual, working as well for a business lunch as for a group, and Testal now runs two more Mexico City locations, in Roma Norte and Polanco, alongside the original Centro Historico branch.
Bellas Artes and the Alameda Central are a short walk away, which makes it an easy stop before or after the museums.
