Masa-driven Mexican cooking off the Alameda
Testal takes its name from the ball of masa a cook flattens into a tortilla, which sets the terms for the whole project: contemporary Mexican cooking anchored in corn. The Centro Historico branch sits at Dolores 16 on the corner of Independencia, a few minutes from Bellas Artes and the Alameda Central.
The menu pulls recipes from across the country rather than from a single region, moving between huitlacoche and nopales, moles and chile-forward salsas, with produce and preparations credited to their home states. The pulpo adobado a las brasas is the dish the kitchen is known for, braised three times before it reaches the grill and served with salsa and baked potatoes.
