Ticuchi is Enrique Olvera's agave bar in Polanco, on Francisco Petrarca street, where Pujol operated before its 2017 move to Tennyson Street. The room is dark, low ceilinged and cave-like, a deliberate contrast to the glass and marble of the surrounding streets.
The list is the reason most people come. Mezcal, tequila and other agave distillates, many of them small batch, are poured neat or built into cocktails by a bar team that treats provenance seriously. The food is not an afterthought: the kitchen sends out Mexican small plates designed to be shared across a long sitting, with masa, chiles and seasonal produce doing most of the work.
The crowd mixes Polanco regulars, restaurant industry people and visitors who have already eaten at Pujol and want the other half of the Olvera project. Doors open in the evening early in the week, and the room runs from mid-afternoon to one in the morning Thursday through Saturday.
Tables are reserved through SevenRooms using the button on ticuchi.mx. Bar stools can sometimes be had on a walk-in, but the dining tables go quickly on weekends.
