Basque asador with a Josper on the terrace
Zeru is the Basque grill house that Grupo Zeru built in Lomas de Chapultepec after more than a decade running the original room in San Angel. The Monte Everest address is the group's most ambitious: a large terrace with an open Josper grill in full view of the tables, and a dining room built around product rather than showmanship. The group has since taken the name to Miami.
Chef Israel Aretxiga runs the kitchen and the cooking is Basque first, which in practice means fish and shellfish handled simply and hard over fire. Turbot is flown in from Vigo, and the supporting cast covers serrano ham croquetas, Galician style octopus, squid in its ink and roasted peppers stuffed with cod.
