Miku sits on the Coal Harbour waterfront at the foot of Granville Street, the room that introduced flame-seared aburi sushi to Canada. It opened in 2008 as the first restaurant to bring the aburi style to Vancouver, later moving to this landmark spot, and it carries a Michelin Guide listing for the city. Floor-to-ceiling glass looks out over the inlet toward Canada Place and the North Shore mountains.
Seigo Nakamura built the aburi concept here: fish lightly seared over binchotan charcoal, brushed with house sauces that caramelize under the flame. The signature is the Aburi Salmon Oshi Sushi, pressed wild sockeye with jalapeno and Miku's special sauce, the one plate every first-timer should order. Also look for the pressed prawn oshi with lime zest and ume, and the house-cured saba (mackerel) with miso.
Beyond the sushi bar, the kitchen runs a multi-course menu that folds French and Italian touches into Japanese technique, with BC seafood at the center and a wine list that has earned the Wine Spectator Award of Excellence.
Sunset is the move: ask for a window table and time it so the light drops over the harbor mid-meal. Weekends and the summer cruise-ship season fill fast, so aim to book one to two weeks ahead for a prime evening. Lunch and the bar are the easier walk-in options. Dress is smart-casual; a collared shirt or a nice dress fits right in, and sharp denim is fine.
